Fukumatsu

A riverside minshuku in Shimoda Onsen on the Amakusa islands, run by a family with roots in the local fishing trade. The indoor communal bath draws straight from the Shimoda spring via kakenagashi (源泉掛け流し, continuously replaced from the source), and the water is notably soft. The Showa-era building is plain and worn, but guests consistently come back for the seafood-heavy dinners and the quiet, unhurried pace.
