About

A public steam-cooking workshop on Ideyu-zaka in Kannawa, built around jigoku-mushi (地獄蒸し), the method the quarter has cooked with since the Edo period. You put your ingredients in a basket, lower it into a kettle where 98°C spring vapour is roaring out, and the salty steam does the rest. Kettles are rented by the quarter-hour and the ingredients are sold on site. The pocket park next door has a free footbath built low enough for a wheelchair, a foot-steam, and a fountain of drinkable spring water.
