Kohaji is a kappou-minshuku (割烹民宿), a small family-run inn built around its own kitchen, on Suzaki fishing port in Shimoda. The bath is simple: one indoor tub each for men and women, filled with plain (tanjun) spring water piped in as Shimoda Onsen, no outdoor bath. The doors lock from inside, so a couple or family can reserve a tub for themselves. Guests describe the water as mild and gentle rather than scalding. Open since 1972, the inn is now run by a second-generation owner who trained at a restaurant in Tokyo's Kagurazaka district, and dinner is built around whatever comes off the boats moored right outside, kinmedai (金目鯛, golden-eye snapper) among it.
